Heaven City is taking Illinois' approach
to solving the Asian carp problem one step further!
Heaven City Restaurant's chef offers an "invasivore"
tapas style dinner in February, as part of his Tapas Tuesday series, starring
dishes made from a few invasive Asian carp species taken from the Illinois
River,
the Milwaukee Journal Sentinel reported.
Last July, Illinois Gov. Pat Quinn announed an initiative to boost commercial
Asian carp fishing, aiming to export up to 30 million pounds of Asian
carp to upscale restaurants in China by the end of 2011.
As reported
by JS Online, the Chinese were excited as "the high quality and
taste of the wild Asian carp far exceeds" their expectations. They
see a tremendous market for the wild US Asian carp, seen as a delicacy
in China.

Steps for the Planet recommendations, Heaven City Restaurant is taking steps
to make carp a popular food in US. Promoting Asian carp as a gourmet food
item is just one tactic - a strategy that was successfully implemented
in Japan for jellyfish back in 2005.
The Challenge of Turning Asian Carp from Menace into Spectacular
& Unique Haute Cuisine
"If it's good enough to ship 30 million pounds to China then it's
good if the United States of America can come up with some creative ways
to use it as well", says Heaven City's chef Jimmy Wade in a radio
interview on WGN in Chicago.
"What I experienced with this fish really amazed me", continues
chef Jimmy. "You are what you eat ... they feed on plankton, and
algae, and see grass, and things like that. So therefore you don't end
up with that muddy taste."
Despite their reputation, Asian carp are a fleshy, nutritious, and tasty
white fish:
- Low in fat, with levels of Omega 3 fatty acids almost as high as
salmon,
- Extremely clean, low in low in contaminants - USDA
test results came back “pristine”,
- "Very fresh, delicate flavor", described as a mix between
crab meat & scallops.
Talking about his Invasivore Tapas style dinner featuring an all Asian
carp menu on WGN, Chef Jimmy admits that he was surprised. "We did
it in a number of ways: we poached it, smoked it, pan seared it, steaked
it ... every way we could possibly think of, and there was not one way
that we liked better than the other."
